1 onion, diced 2 carrots, diced 2 cups of cauliflower, chopped 1 cup green peas 3 tablespoons olive oil, divided 1 teaspoon cumin seeds 1 teaspoon mustard seeds 4 cloves garlic, minced 1 teaspoon ground turmeric 1 teaspoon ground coriander 2 teaspoons salt, divided 1 can (14.5 ounces) diced tomatoes, undrained 1 cup water 2 tablespoons freshly squeezed lemon juice Cilantro leaves for garnish

Instructions: 1. In a large pot or Dutch oven, heat 1 tablespoon of the oil over medium heat. Add the onion, carrot, cauliflower and green peas. Cook until the vegetables are tender, stirring occasionally.

2.Meanwhile, in a small pan, heat 1 tablespoon of the oil over medium-high heat. Add the cumin and mustard seeds. Cook for a few minutes until the seeds start to pop. Add the garlic and cook for another minute until fragrant. Add this mixture to the pot with the vegetables.

  1. Stir in the turmeric, coriander and 1 teaspoon of salt. Add the tomatoes and their juice to the pot followed by water and lemon juice.
